Corn first evolved in Central America and has gone on to be fundamental to world food supplies. But back where it all started . . . the pictures below show the total corn cycle at COAR. It starts with planting corn on our large campus in the spring. This year the St. Edward High School visitors (more about their visit in the next two stories, 2of3 here, 3of3 here) added to the acres already planted by the COAR kids. As the summer and fall progress, they harvest the corn, dry it, process the dried kernels, and use them all year long for tortillas and other staples. They gain confidence and valuable skills as they go. But the also have fun, healing body AND soul, look!
